Fresh Orange & Raisin Porridge


This nourishing, cool porridge is just delicious! It is the perfect uplifting meal to enjoy on a winter’s day when the sun just peeps out for a moment or two.

Not all winter days are cold and cloudy. Sometimes the sun wants to hang out for a little while, and it’s so nice when it does! Enjoying the warm rays sparked the inspiration for this refreshing dish, using zesty seasonal oranges.

Porridge is usually eaten hot off the stove, but have you ever tried cold porridge? It’s delicious! As an added bonus, cold porridge contains a form of starch called resistant starch that helps to feed the good bacteria in the large intestine, promoting a healthy gut and microbiome. In addition, resistant starch has lesser impact on blood-sugar dysregulation, as the breakdown of carbohydrate is released at a slower rate into the blood stream.

Ingredients:

1 cup quick oats

1-2 tablespoons dry chia seeds

1 cup almond milk (or milk of your choice)

1 cup water

1/2 teaspoon sea salt

1 tablespoon raisins

1/2 small orange (peeled and sliced)

1/4 cup full-fat natural Greek yohgurt

1 tablespoon raw, unsalted cashews

How to make the porridge:

To make the porridge, put the oats, chia seeds, almond milk, water and sea salt in a medium-sized saucepan and bring to the boil, stirring occasionally.

Turn the heat down to medium-low and cook for a further 3-5 minutes, stirring occasionally. Transfer the porridge to a bowl and cool in the fridge (usually overnight). This amount of porridge makes 3-4 serves.

serving:

Spoon 1/2 to 3/4 cup of the cold porridge mixture into a serving bowl. Sprinkle the raisins over the cold porridge. Next, spoon on a generous dollop of Greek yoghurt and top with slices of fresh orange and finish with sprinkle of cashews.
